I like your idea to get down to one racking. Without the fruit lees in the mix I would think that you could almost just wait until fermentation is completely over before racking.

By: Gary Beaumont http://winemakersacademy.com/long-primary-secondary-fermentations/#comment-349 Fri, 30 May 2014 16:27:00 +0000 http://winemakersacademy.org/?p=2198#comment-349 Nearly all the kits I have done have got to below 1.000 within 2 weeks, these days I leave it for 2 weeks, then rack if it`s dropped below 1.000 leave it another week and check SG by then the are .992 – .994 I have only had 1 kit stick at 1.000, I didn`t bother trying to restart just made sure of stopping fermentation just incase. I find doing it this way I can get away with just the 1 rack and not having too much wastage. I`m tight and don`t like throwing too many dregs away 🙂
