I’ve never come across a formula for predicting the amount of sweetener you would need. The best thing to do is bench trials. Measure out a few samples of wine, say 100ml, add some sweetener (juice in your case) in a measured amount, then when you find the mix you like replicate the same ratio when you back sweeten the rest of your wine.

Hi bruce, typically you would stabilize with potassium sorbate and potassium metabisulfite, then back sweeten to taste, then bottle. Even though the wine has been stabilized it is not recommended that you leave it in a carboy. It’s best to get it under the protection of a cork or alternative closure.
